Caramel Frosted Coconut Chocolate Cookie Bars Recipe

Coconut and chocolate combine to form a tasty combination in a variety of cookies and cakes many of us love.

MTS Nutrition recently released their newest delicious protein powder, Coconut Chocolate Cookie. This flavor blends a creamy chocolate cookie taste with coconut and it smells as great as it tastes. Coconut Chocolate Cookie protein is also a great ingredient to cook with.

This recipe starts with an oat and coconut flour based cookie that is flavored with Coconut Chocolate Cookie protein powder. A fat-free cream cheese and caramel yogurt based frosting tops the cookie bar. Finally, toasted coconut and chopped chocolate chips provide the finishing touches to this treat.

This is an easy recipe anyone can make. Feel free to experiment with different nut butters, they provide a healthy source of fat and improve the texture of the cookie bar.

Cookie Bar Ingredients

  • 25g MTS Coconut Chocolate Cookie Protein Powder
  • 1/3 cup Oat Flour
  • 2 TBSP Coconut Flour
  • 2 tsp. Truvia
  • ½ tsp. Baking Powder
  • 1 Egg
  • 4 TBSP Egg Whites
  • ½ tsp. Vanilla Extract
  • 1 TBSP Cashew Butter

Cooking Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray or butter a 9 X 11 baking pan. Line the bottom with parchment paper to make it easier to remove the cookie bar.
  3. Combine protein powder, oat flour, coconut flour, Truvia and baking powder in a bowl and set aside.
  4. Mix egg, egg whites, and vanilla extract in a stand mixer.
  5. Add bowl with the dry ingredients to the wet ingredients in the stand mixing bowl and mix well.
  6. Pour cookie batter into baking pan and evenly spread the batter out with a spatula.
  7. Place in the oven for 10-12 minutes or until an inserted toothpick comes out clean.
Remove from pan and cool completely.

Frosting Ingredients

  • 4 ounces Fat-Free Cream Cheese
  • 4 ounces Fat-Free Caramel Greek Yogurt
  • 1 TBSP Truvia
  • 1 TBSP Vanilla Fat Free Pudding Powder
  • ½ tsp. Vanilla Extract
Beat cream cheese in a stand mixer until smooth. Add remaining ingredients and mix well. Allow the cookie bar to completely cool and spread the frosting on top of it.

Top with ½ ounce toasted coconut and ½ serving chopped chocolate chips.
